  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat the oven to 350°F. Grease a 9” square baking dish and line it with parchment paper.
  2. In a sauté pan, boil the apple cider until reduced by half; add diced butter and whisk until melted.
  3. In a medium bowl, combine eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, spices, and salt. Whisk well.
  4. Slowly incorporate the reduced cider into the wet mixture until combined.
  5. Stir in the flour until just mixed.
  6. Pour the batter into the prepared dish and bake for 22–25 minutes or until golden.
  7. Allow to cool slightly before topping with melted butter and a mixture of sugar and cinnamon.
