  • ¼ cup plus 2 teaspoons brown sugar (light or dark, packed)
  • ¼ cup apple butter or applesauce
  • 2 eggs
  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted) for coating
  • ¼ cup sugar for coating
  • ½ teaspoon cinnamon for coating
  • ½ cup unsalted butter (for filling – room temperature)
  • 1 ¼1 ½ cups powdered sugar (for filling – sifted)
  • 2 tablespoons plus 2 teaspoons caramel sauce (for filling)
  • 4 ½ ounces cream cheese (for filling – room temperature)
  • 3 tablespoons butter (for filling – room temperature)
  • 2 tablespoons brown sugar (for filling)
  • ½ teaspoon vanilla extract (for filling)
  • 1 pinch salt (for filling)

Instructions

  1. Preheat oven to 350°F and reduce apple cider in a saucepan until it reaches ¼ cup. Cool.
  2. In a bowl, sift together flour, baking powder, baking soda, salt, and spices.
  3. Beat butter and sugars together; add eggs and vanilla. Mix in reduced apple cider and apple butter.
  4. Gradually fold in dry ingredients until just combined.
  5. Drop spoonfuls onto prepared baking sheets and bake for 11–13 minutes or until springy.
  6. Cool cookies on a rack; fill with chosen icing once cooled completely.
