  • 4 lamb shanks (about 2 lbs total)
  • Salt and freshly ground black pepper
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 cup apple vinegar
  • 2 cups beef or lamb broth
  • 2 tbsp tomato paste
  • Fresh rosemary and thyme
  • 2 bay leaves

Instructions

  1. Season the lamb shanks with salt and pepper. In a heavy-bottomed pot, heat olive oil over medium-high heat. Brown the lamb on all sides before removing them from the pot.
  2. Sauté the onion, carrots, celery, and garlic until softened. Stir in apple vinegar to deglaze the pot.
  3. Add broth and tomato paste; return the lamb shanks along with herbs to the pot.
  4. Bring to a simmer, cover, and braise on low heat for about 2 hours until tender.
  5. For roasted potatoes, preheat oven to 400°F (200°C). Chop potatoes into wedges, toss with olive oil, salt, and pepper; roast for 30-40 minutes until crispy.
  6. Serve lamb shanks with roasted potatoes drizzled in sauce.
