  • 1 cup fresh blackberries
  • 1 small red onion, thinly sliced
  • 1 cup crumbled goat cheese or feta
  • 1 cup toasted pecans or walnuts
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey (or maple syrup)
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Prepare the vinaigrette by whisking together olive oil, fresh lemon juice, honey (or maple syrup), Dijon mustard, salt, and pepper in a jar or bowl until combined.
  2. In a large mixing bowl or on a platter, layer mixed greens first.
  3. Add sliced avocado evenly over the greens, followed by fresh blackberries and red onion slices.
  4. Sprinkle crumbled goat cheese (or feta) and toasted nuts on top.
  5. Drizzle vinaigrette just before serving and finish with freshly cracked black pepper.
