  • 4 lamb shanks (about 2 lbs total)
  • Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 cup apple vinegar
  • 2 cups beef or lamb broth
  • Fresh rosemary and thyme sprigs
  • Bay leaves

Instructions

  1. Season the lamb shanks generously with salt and pepper.
  2. In a Dutch oven, heat olive oil over medium-high heat. Sear the lamb shanks on all sides until browned (about 4-5 minutes per side). Remove and set aside.
  3. In the same pot, sauté onions, garlic, carrots, and celery until the onions are translucent (about 5-7 minutes). Stir in the tomato paste.
  4. Deglaze with apple vinegar while scraping up browned bits.
  5. Return the lamb shanks to the pot, add broth and herbs, then bring to a simmer.
  6. Cover and braise in a preheated oven at 325°F (160°C) for about 2-3 hours until tender.
  7. Remove from oven, discard herbs, and serve warm.
