  • 1 small bunch thyme
  • 1 large onion, chopped
  • 3 stalks celery, chopped
  • 2 carrots, chopped
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 3 bay leaves
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 cup fresh plum tomatoes, chopped

Instructions

  1. Preheat your oven to 325°F (163°C). Season the lamb shanks with salt and pepper.

  3. In the same pot, sauté chopped onion, celery, and carrots until softened (about 5 minutes). Add minced garlic, smoked paprika, ground cumin, cinnamon sticks, rosemary, thyme, bay leaves, and optional red pepper flakes.
  4. Return the lamb shanks to the pot and add chicken stock until nearly covering the meat. Stir in chopped tomatoes.
  5. Cover and braise in the oven for 2 to 2.5 hours until fork-tender.
  6. Let rest briefly before serving. Plate with vegetables and drizzle with gravy.
