  • 9 tbsp (134g) salted butter
  • 1/2 cup (125g) brown sugar, light or dark
  • 1/4 cup (40g) granulated sugar
  • 1 egg, at room temperature
  • 1 tbsp (15g) heavy cream, at room temperature
  • 1 1/2 tsp (8g) vanilla extract
  • 1 1/4 cup + 2 tbsp (190g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1g) salt
  • 3/4 cup (120g) semi-sweet chocolate chips
  • 3 cups (300g) kataifi (shredded phyllo dough)
  • 1 cup (300g) pistachio cream/butter
  • 2 tbsp (28g) salted butter
  • 2 cups (475ml) heavy cream
  • 1 cup (170g) semi-sweet chocolate chips
  • Chopped pistachios

Instructions

  1. Preheat the oven to 350°F. Grease an 8×8” baking pan with butter and line it with parchment paper.
  2. Melt salted butter in a saucepan over medium-high heat until browned (about 5 minutes). Cool slightly.
  3. In a bowl, whisk together flour, baking soda, baking powder, and salt.
  4. In the bowl of cooled brown butter, mix in sugars followed by egg, heavy cream, and vanilla until smooth.
  5. Combine wet and dry ingredients without overmixing, then fold in chocolate chips.
  6. Spread the mixture into the prepared pan and bake for 22-27 minutes until lightly golden.
  7. For the pistachio filling: Toast kataifi in melted butter until golden, then mix with pistachio cream once cooled.
  8. Prepare chocolate ganache by heating heavy cream and pouring it over chocolate chips; stir until smooth.
  9. Assemble: Layer pistachio filling on cookie base, pour ganache over top, and sprinkle with chopped pistachios.
  10. Chill for at least one hour before cutting into bars.
