Ingredients

Scale
  • 1 lb boneless skinless chicken breasts, cut into thick bite-sized pieces
  • 12 oz bowtie pasta
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • ½ teaspoon Cajun seasoning (for the sauce)
  • Fresh chopped parsley, for garnish (optional)

Instructions

  1. Cook the bowtie pasta in a large pot of salted boiling water until al dente (10-11 minutes). Reserve ½ cup of pasta water, then drain.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear the seasoned chicken until golden brown (8-10 minutes). Remove from skillet.
  3. In the same skillet, melt additional butter and sauté minced garlic until fragrant. Add heavy cream and milk, simmering gently.
  4. Stir in Velveeta until melted, then add mozzarella and Parmesan cheeses until smooth. Mix in Cajun seasoning.
  5. Combine cooked pasta with sauce; use reserved pasta water if needed for consistency. Serve hot alongside chicken.
