  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar, packed
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled, cored, and chopped into small pieces
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon for topping
  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon for glaze
  • 2 tablespoons water

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8.5 x 4.5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and granulated sugar until light. Add eggs one at a time.
  4. Gradually mix in dry ingredients and milk until just combined.
  5. In another bowl, combine chopped apples with brown sugar and cinnamon.
  6. Layer half the batter in the pan, add half of the apple mixture, then swirl lightly; repeat with remaining batter and apples.
  7. Bake for 45-55 minutes until a toothpick comes out clean.
  8. Cool slightly before glazing with confectioners’ sugar mixed with water.
