  • 2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans (toasted if desired)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two loaf pans or one bundt pan.
  2. In a large bowl, whisk together oil (or melted butter), sugar, eggs, vanilla extract, and buttermilk until smooth.
  3. In another bowl, combine flour, ground cinnamon, baking powder, baking soda, and salt. Mix until well combined.
  4. Gradually add the dry ingredients to the wet mixture without overmixing; fold in chopped pecans.
  5. If desired, prepare an optional topping by mixing brown sugar, cinnamon, and chopped pecans in a small bowl; sprinkle over the batter before baking.
  6. Pour the batter into prepared pans and bake: loaves for 45–55 minutes or bundt cake for 55–65 minutes. Check for doneness with a toothpick—it should come out clean.
  7. Allow cooling in the pan for about 10–15 minutes before transferring to a wire rack.
