  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk

  1. Heat coconut oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes), then add minced garlic and grated ginger; cook for another minute.
  2. Increase heat to medium-high and add beef chunks. Brown on all sides for about 8-10 minutes. Drain excess fat if needed.
  3. Sprinkle in curry powder, turmeric, coriander, and optional chili flakes. Stir well to coat beef evenly. Add tomato paste and coconut milk; mix thoroughly.
  4. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 2 hours or until beef is tender, stirring occasionally.
