  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1 can (13.5 oz) coconut milk

Instructions

  1. Heat vegetable oil in a heavy-bottomed pot over medium-high heat. Sear beef cubes in batches until browned (about 4-5 minutes). Remove and set aside.
  2. In the same pot, sauté chopped onion until translucent (3-4 minutes). Add minced garlic and grated ginger; cook for another minute.
  3. Stir in red curry paste, turmeric, cinnamon, cumin, and optional chili powder; toast spices for about 2 minutes.
  4. Return seared beef to the pot and pour in coconut milk to cover the meat. Bring to a gentle simmer.
  5. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender. Stir occasionally and add water if needed.
