  • 300g rotini pasta (or any short pasta)
  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt & pepper to taste

Instructions

  1. Cook the rotini according to package directions. Add broccoli during the last 3 minutes of cooking. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add diced chicken and cook until golden brown and fully cooked through, about 6-8 minutes. Stir in minced garlic and cook for another minute.
  3. Reduce heat to medium-low. Pour in heavy cream and chicken broth, then stir in Parmesan cheese, salt, and pepper. Simmer until slightly thickened for about 3-5 minutes.
  4. Combine the drained pasta and broccoli into the skillet with the creamy sauce, tossing gently to coat everything evenly.
