  • 1 lb boneless, skinless chicken breast, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz uncooked penne or rotini pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh spinach (optional)

  1. Heat olive oil in a large pot over medium heat. Add diced chicken, seasoning with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove from pot and set aside.

  4. Add uncooked penne or rotini to the simmering sauce. Cook according to package instructions until al dente.
