  • 2 lbs boneless, skinless chicken thighs
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tbsp Dijon mustard
  • 1 cup chicken broth
  • 8 oz cream cheese, softened
  • 3/4 cup sour cream
  • 3 cups fresh spinach

Instructions

  1. In a large skillet over medium heat, cook chopped turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, sauté onions until translucent; add garlic and cook until fragrant.
  3. Increase heat to medium-high and brown the chicken thighs seasoned with smoked paprika, salt, pepper, and nutmeg.
  4. Stir in Dijon mustard and chicken broth; bring to a simmer.
  5. Lower the heat and add cream cheese until melted; mix in sour cream.
  6. Fold in wilted spinach and return crispy turkey bacon to the skillet; serve warm over pasta or rice.
