  • 1 tablespoon olive oil or 1/4 cup water
  • 1 large white onion, sliced
  • 6 cloves garlic, minced
  • 2 1/2 lbs. tomatoes (roma, plum or tomatoes on the vine)
  • 1/2 cup basil leaves (about 1012 large leaves) or 2 teaspoons dried
  • 1/2 teaspoon dried oregano
  • 2 cups low-sodium vegetable broth
  • Salt and pepper, to taste
  • Vegan cream, to serve

Instructions

  1. Prepare your ingredients by slicing the onion and mincing the garlic; cut tomatoes into quarters.
  2. In a heavy-bottom pan, heat olive oil or water over medium heat. Sauté the onion for about 7 minutes until translucent, then add minced garlic for another minute.
  3. Add chopped tomatoes, basil leaves, oregano, salt and pepper to taste, and vegetable broth; stir well.
  4. Bring to a boil, cover, reduce heat to low, and simmer for 15 minutes until tender.
  5. Allow to cool slightly before blending with an immersion blender until smooth. Adjust seasoning if needed and stir in vegan cream.
  6. Serve warm with a drizzle of vegan cream on top and garnish with fresh basil.
