  • 1/4 cup all-purpose flour

  2. Heat olive oil in a large pot over medium heat. Season beef with salt and pepper; brown in batches until golden. Remove and set aside.

  4. Stir in flour and mix well to coat vegetables; return beef to the pot along with tomato paste and herbs.
  5. Add beef broth; bring to a boil then reduce heat to low. Cover and simmer for about 2 hours.
