  • 2 tsp Baking soda
  • 1/4 tsp Salt
  • 2 tsp Ground ginger
  • 1 tsp Cinnamon
  • 1/4 tsp Ground clove
  • 1 tbsp Espresso powder
  • 1 1/2 sticks Unsalted butter (softened)
  • 3/4 cup Brown Sugar (dark or light)
  • 1/4 cup White granulated sugar
  • 1 Large egg (room temperature)
  • 2 tsp Vanilla extract
  • 1/4 cup Molasses
  • White granulated sugar (for rolling)
  • 1 1/2 cup Powdered sugar (sifted)
  • 1/4 tsp Ground cinnamon
  • 2 tbsp Espresso or strong coffee (adjust as needed)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, ground clove, and espresso powder; set aside.
  3. In another bowl, cream softened butter with brown and granulated sugars until fluffy. Add egg and vanilla; mix well.
  4. Gradually combine dry ingredients with the wet mixture until just mixed; fold in molasses.
  5. Roll dough into tablespoon-sized balls and coat in granulated sugar before placing on prepared sheets.
  6. Bake for about 13 minutes until edges are set and centers remain soft; cool slightly before transferring to racks.
  7. For the glaze, mix powdered sugar with cinnamon and espresso until smooth; drizzle over cooled cookies.
