  • 1 cup cucumber, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 1 cup Kalamata olives
  • 1 cup feta cheese, cubed
  • 1 tbsp olive oil
  • 1 tsp apple cider vinegar
  • 1 tsp dried oregano
  • Salt & freshly cracked black pepper, to taste

Instructions

  1. Slice the cucumber into half-moons and halve the cherry tomatoes.
  2. Thinly slice the red onion.
  3. In a large mixing bowl, combine cucumbers, tomatoes, onion, Kalamata olives, and cubed feta cheese.
  4. In a small bowl, whisk together olive oil, apple cider vinegar, oregano, salt, and pepper until combined.
  5. Pour the dressing over the salad and toss gently to coat evenly. Serve immediately.
