  • 1 large chicken breast
  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 1 cup cherry tomatoes
  • 3 tbsp olive oil
  • Juice of 1/2 lime
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • 1/4 small red onion, thinly sliced

Instructions

  1. Preheat oven to 200C (400F).
  2. Toss sweet potato wedges in olive oil, smoked paprika, and salt; spread on a baking sheet and bake for 20-25 minutes until crispy.
  3. Season chicken breast with olive oil, paprika, garlic powder, salt, and pepper; grill for 6-7 minutes per side until cooked through.
  4. In a bowl, mash avocado with lime juice, salt, and pepper to make guacamole.
  5. Combine cherry tomatoes, diced avocado, red onion, olive oil, salt, and pepper in another bowl for the salad.
  6. Assemble bowls: place sweet potato fries at the bottom, top with sliced grilled chicken, add guacamole, and finish with the tomato-avocado salad.
