  • Garlic powder, to taste

  • 34 cherry tomatoes, diced
  • 1 small red onion, finely chopped
  • Juice of 1 lime
  • 45 cherry tomatoes, halved

Instructions

  1. Preheat oven to 425°F (220°C). Toss sweet potato wedges with olive oil, paprika, salt, and pepper. Bake on a baking sheet for 25-30 minutes until crispy.

  3. In a bowl, combine diced avocado, red onion, cherry tomatoes, lime juice, and salt to make guacamole; mash lightly for desired texture.
