  • 1 can (20 oz) crushed pineapple (with juice)
  • ½ cup chopped pecans (optional)
  • ½ cup sweetened shredded coconut (optional)
  • 1 package (8 oz) cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • 23 tbsp pineapple juice (reserved from the can)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, baking soda, and salt. Stir in eggs, vanilla extract, and crushed pineapple with its juice until blended. Fold in pecans and coconut if desired.
  3. Divide the batter evenly between the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Let cool for 10 minutes before transferring to wire racks to cool completely.
  4. For the frosting, beat softened cream cheese and butter until creamy. Gradually add powdered sugar, then mix in vanilla extract and pineapple juice until smooth.
