  • 1 tablespoon fresh rosemary (roughly chopped)
  • 5 cloves garlic (minced)
  • 2 cups sliced carrots
  • 1 medium yellow onion (diced)
  • 3 tablespoons tomato paste
  • 1 tablespoon flour
  • 4 cups chicken broth
  • 1 can (28 oz) peeled whole tomatoes
  • 1 tablespoon red apple vinegar
  • 8 oz BelGioioso burrata

Instructions

  1. In a large pot over medium heat, cook the turkey bacon until crispy (about 10 minutes). Add butter and let it melt.
  2. Stir in fresh herbs and garlic; cook until fragrant (2-3 minutes). Add carrots and onion; sauté until softened (about 10 minutes).
  3. Mix in tomato paste; cook until darkened (2-3 minutes). Stir in flour, then add chicken broth and whole tomatoes—smash tomatoes gently. Add red apple vinegar.
  4. Bring to a boil, reduce heat, and simmer for 30-45 minutes.
  5. Blend the soup in batches until smooth. Serve in bowls with a dollop of burrata.
