  • 1/2 cup granulated sugar
  • 1 tsp cinnamon (optional)

  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3/4 cup honey
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 tbsp lemon juice

Instructions

  1. Prepare the honey syrup by simmering honey, water, sugar, and lemon juice in a saucepan for 10 minutes. Let it cool.
  2. Preheat the oven to 325°F (160°C) and prepare a springform pan.
  3. Layer phyllo dough and butter in the springform pan, adding chopped pistachios and sugar between layers.
  4. In a mixing bowl, beat softened cream cheese, gradually add sugar, then incorporate eggs one at a time along with sour cream.
  5. Pour the cheesecake filling over the phyllo layer and top with more buttered phyllo sheets.
  6. Bake for 60-70 minutes until slightly jiggly in the center. Cool before refrigerating for at least four hours or overnight.
