  • Salt & black pepper
  • 1 carrot
  • 1 zucchini
  • 2 garlic cloves
  • 1 tbsp butter (or olive oil)
  • Juice of 1 lemon
  • Fresh parsley or dill for garnish

Instructions

  1. In a skillet, heat half of the butter over medium heat. Sauté whole or halved garlic cloves, sliced carrot, and zucchini sticks for about 6–8 minutes until tender. Season with salt and pepper; set aside.
  2. Season the white fish fillet with salt and pepper. In the same skillet, melt the remaining butter on medium-high heat. Sear the fish for 3–4 minutes per side until golden brown and flaky. Add lemon juice during the last 30 seconds.
  3. Plate the seared fish alongside the sautéed veggies and garnish with chopped fresh herbs.
