  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • Juice of lemon
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 1 cup cooked basmati rice
  • Cucumber, sliced
  • 1 cup canned chickpeas, rinsed & drained
  • Fresh dill for garnish
  • 1 cup Greek yogurt
  • Cucumber, grated & squeezed
  • 1 tsp lemon juice

Instructions

  1. Marinate the chicken: Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Coat chicken breasts thoroughly and let marinate for at least 10 minutes.
  2. Grill the chicken: Preheat grill or pan over medium-high heat. Cook marinated chicken for 5–6 minutes on each side until fully cooked (internal temperature should reach 165°F/75°C). Slice into strips.
  3. Make tzatziki: Mix Greek yogurt with grated cucumber (squeezed dry), minced garlic, chopped dill, lemon juice, salt, and pepper until smooth.
  4. Assemble bowls: Layer cooked rice as the base in each bowl. Top with chickpeas, sliced cucumber, sliced grilled chicken, and a dollop of tzatziki sauce.
