  • 5 TBSP Unsalted butter
  • 1/3 cup Oil (canola or vegetable)
  • 1 tsp Pure vanilla extract
  • 1/2 cup All-purpose flour
  • 3/4 cup Unsweetened cocoa powder (dutch process)
  • 1 TBSP Cornstarch
  • 1/4 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Milk chocolate chips
  • 1/2 cup All-purpose flour
  • 1 tsp Cornstarch
  • 1/2 tsp Baking soda
  • 1/8 tsp Baking powder
  • 1/4 tsp Salt
  • 1/4 cup Unsalted butter (room temperature)
  • 1/3 cup Brown sugar (packed light or dark)
  • 1/8 cup White granulated sugar
  • 1/4 cup Peanut butter (creamy)
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1/2 cup Quick oats
  • 1/2 cup Mini chocolate chips
  • 1/2 cup Mini M&Ms

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine sugar, eggs, egg yolk, melted butter, oil, and vanilla extract. Whisk until well combined.
  3. In another bowl, sift together flour, cocoa powder, cornstarch, and salt. Gradually mix dry ingredients into the wet mixture until fully incorporated. Fold in semi-sweet and milk chocolate chips.
  4. Pour the brownie batter into your prepared baking pan. Use a rubber spatula to spread it evenly across the bottom.
  5. In a separate bowl, combine flour, cornstarch, baking soda, baking powder, and salt.
  6. In another bowl, beat together room temperature butter with brown sugar and granulated sugar until creamy.
  7. Add peanut butter and vanilla extract; mix well. Beat in the egg until fully combined.
  8. Gradually add dry ingredients to wet ingredients; then stir in oats, mini chocolate chips, and M&Ms.
  9. Carefully dollop spoonfuls of monster cookie dough over the brownie layer in the pan. Smooth it out gently with a spatula if needed.
  10. Bake in preheated oven for about 40 minutes or until a toothpick inserted comes out mostly clean but still has some moist crumbs attached.
  11. Allow your brownies to cool completely in the pan on a wire rack before cutting them into bars.
