  • 1 salmon fillet (about 150g)
  • 1 large egg
  • 1 cup fresh spinach leaves
  • ½ cup sliced mushrooms
  • 1 small garlic clove (optional)
  • 1 tbsp olive oil (divided)
  • Salt and freshly cracked black pepper to taste
  • Diced avocado for garnish

Instructions

  1. In a skillet, heat ½ tablespoon of olive oil over medium heat. Season the salmon with salt and pepper and place it skin-side down. Cook for 3-4 minutes until crispy, then flip and cook for an additional 2-3 minutes until just cooked through.
  2. In a small frying pan, heat a drizzle of olive oil and crack in the egg; cook sunny-side up until the whites are set but the yolk remains runny.
  3. In the same skillet as the salmon, add sliced mushrooms and sauté until golden brown (add minced garlic if desired).
  4. Quickly add spinach to the skillet, drizzle with remaining olive oil, and sauté until just wilted.
  5. Plate by placing the salmon on one side, topping it with the sunny egg, and arranging sautéed mushrooms and spinach around it. Garnish with diced avocado and sprinkle extra pepper before serving.
