  • 1/2 cup light brown sugar
  • 1 egg
  • 1/4 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1/4 cup almond flour
  • 2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan mini marshmallows
  • 1/2 cup semi-sweet chocolate chips or chunks

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together almond butter, light brown sugar, pumpkin puree, vanilla extract, and egg using a wooden spoon until well combined.
  3. In another bowl, whisk together almond flour, pumpkin pie spice, baking soda, and salt.
  4. Add the dry ingredients to the wet mixture and stir until fully combined. Gently fold in the semi-sweet chocolate chips.
  5. Scoop cookie batter onto the prepared baking sheet, placing vegan marshmallows on top as you scoop.
  6. Bake for 10–12 minutes or until golden brown around the edges. Allow cooling before serving.
