  • 2 lbs lamb shoulder or leg, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chili powder (optional)
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup plain yogurt

Instructions

  1. Prepare the ingredients by cutting the lamb into bite-sized pieces and chopping the onion, mincing the garlic, and grating the ginger.
  2. In a heavy-bottomed pot or slow cooker, heat vegetable oil over medium heat. Sauté the onion until translucent, then add garlic and ginger until fragrant.
  3. Add lamb chunks and brown on all sides for about 5–7 minutes.
  4. Stir in curry powder, cumin, paprika, cinnamon, and chili powder (if using). Add diced tomatoes and mix well.
  5. Cover and slow cook: set the slow cooker on low for 6–8 hours or high for 3–4 hours; if using a pot, lower heat and let simmer gently until lamb is tender.
  6. Before serving, stir in plain yogurt to add creaminess.
