  • 8 tbsp butter (room temperature)
  • 1 cup brown sugar (packed)
  • 1/4 cup molasses
  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

Instructions

  1. In a mixing bowl, whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper; set aside.
  2. In a stand mixer, cream together butter and brown sugar until fluffy. Add molasses and pumpkin puree; mix well.
  3. Incorporate the egg into the wet mixture. Gradually add dry ingredients until just combined.
  4. Chill dough in plastic wrap for at least 30 minutes.
  5. Preheat oven to 350°F and line baking sheets with parchment paper.
  6. Roll chilled dough into balls, coat in sugar, and place on prepared sheets.
  7. Flatten each ball slightly with a glass before baking for 12-14 minutes until set.
  8. Allow cookies to cool before enjoying.
