  • 1 lb fresh jumbo shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 2 tablespoons taco seasoning
  • 1 teaspoon cayenne pepper
  • 1 large ripe mango (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 1 lime (juiced)
  • Salt and pepper to taste
  • 8 soft corn or flour tortillas
  • Optional toppings: sliced avocado, sour cream

Instructions

  1. In a mixing bowl, combine olive oil, taco seasoning, and cayenne pepper. Add shrimp and toss to coat. Marinate for 10 minutes.
  2. Heat a non-stick skillet over medium-high heat. Cook marinated shrimp for 2-3 minutes on each side until pink and opaque. Remove from heat.
  3. In another bowl, mix diced mango, red onion, cilantro, lime juice, salt, and pepper to create the salsa.
  4. Warm tortillas in a skillet or microwave. Fill each tortilla with cooked shrimp and top generously with mango salsa. Add optional toppings if desired.
