  • 1 cup Buttermilk (room temperature)
  • 1 cup Coffee (hot)
  • 1/2 cup Canola oil
  • 2 tsp Vanilla extract
  • 2 cups Fresh blackberries
  • 2 tbsp White granulated sugar (for compote)
  • 1 tbsp Fresh lemon juice
  • 1 tsp Lemon zest
  • 1 Cinnamon stick
  • 1/4 cup Water
  • 1 tbsp Cornstarch
  • 8 oz Cream cheese (softened)
  • 1/2 cup Unsalted butter (softened)
  • 3 cups Powdered sugar (sifted)
  • 1 cup Black cocoa powder (sifted)
  • 1/4 tsp Salt (for frosting)
  • 1 tsp Vanilla extract (for frosting)
  • Chocolate skulls (for decoration)
  • Fresh blackberries (for decoration)
  • Dried rose petals (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. Sift together dry ingredients: flour, black cocoa powder, baking soda, baking powder, and salt in a large bowl.
  3. In another bowl, whisk eggs, buttermilk, hot coffee, canola oil, and vanilla extract until combined.
  4. Gradually mix wet ingredients into dry ingredients until just combined; avoid overmixing.
  5. Divide batter between pans and bake for about 30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to racks.
  6. Prepare blackberry compote by cooking blackberries with sugar, lemon juice, zest, cinnamon stick, water, and cornstarch until thickened; let cool.
  7. Make buttercream frosting by beating cream cheese and butter until smooth; add powdered sugar and black cocoa powder gradually until fluffy.
  8. Assemble the cake by layering one cake with blackberry compote and frosting before placing the second layer on top and frosting the entire cake.
