  • 23 slices of semi-hard cheese (like cheddar or gouda)
  • 1 tbsp olive oil or butter (for frying)
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a non-stick frying pan, heat olive oil over medium heat. Add zucchini slices and cook for 2-3 minutes per side until golden and tender. Season lightly with salt and pepper; set aside.
  2. In the same pan, crack in the eggs and cook sunny-side-up until the whites are set and yolks remain runny. Season with salt and pepper.
  3. On a serving plate, arrange sliced cucumber, tomato, cheese, and sautéed zucchini. Top with cooked eggs and garnish with chopped parsley.
  4. Serve immediately while warm for the best flavor.
