  • 1 medium sweet potato
  • 1 tsp olive oil
  • Salt & pepper to taste
  • 150g (5 oz) lean ground beef
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 1 avocado, sliced
  • ½ cup cottage cheese
  • 12 tsp honey

Instructions

  1. Preheat the oven to 200C (400F). Toss cubed sweet potato with olive oil, salt, and pepper. Roast for 20-25 minutes until golden brown and tender.
  2. In a skillet over medium heat, cook the ground beef until browned. Season with smoked paprika, garlic powder, salt, and pepper.
  3. In a mixing bowl, layer the roasted sweet potatoes first, followed by the cooked beef, sliced avocado, and cottage cheese.
  4. Drizzle honey over the avocado and cottage cheese before serving.
