  • 1/2 lb (225g) lean ground beef
  • 1 medium sweet potato, peeled and diced
  • 1/2 avocado, sliced
  • 1/2 cup cottage cheese
  • 1 tsp olive oil
  • Salt, pepper, paprika, and garlic powder to taste
  • 1/2 tsp hot honey or chili honey

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper in a mixing bowl. Spread on a baking sheet and roast for about 25 minutes until golden brown.
  2. In a skillet over medium heat, cook the ground beef until browned and crispy; season with salt and pepper.
  3. Assemble the bowl by layering roasted sweet potatoes first, followed by cooked ground beef. Add sliced avocado and a scoop of cottage cheese.
  4. Drizzle with hot honey or chili honey before serving.
