1/2 lb (225g) lean ground beef
1 medium sweet potato, peeled and diced
1/2 avocado, sliced
1/2 cup cottage cheese
1 tsp olive oil
Salt, pepper, paprika, and garlic powder to taste
1/2 tsp hot honey or chili honey
Instructions
Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper in a mixing bowl. Spread on a baking sheet and roast for about 25 minutes until golden brown.
In a skillet over medium heat, cook the ground beef until browned and crispy; season with salt and pepper.
Assemble the bowl by layering roasted sweet potatoes first, followed by cooked ground beef. Add sliced avocado and a scoop of cottage cheese.
