  • 1 green apple, halved and de-seeded
  • 1 medium onion, diced (optional)
  • 1 carrot, halved
  • 4 medium tomatoes, halved
  • 1 tbsp stock powder
  • 3 cups water
  • Salt and pepper to taste

Instructions

  1. In a saucepan over medium heat, melt the vegan butter or coconut oil. Add diced onions (if using) and sauté until softened (about 2 minutes).
  2. Stir in chopped tomatoes and salt; cook until they soften.
  3. Add halved carrots and green apple to the pot. Pour in enough water to cover all ingredients.
  4. Simmer until vegetables are tender, adding more water if necessary.
  5. Let cool slightly before blending until smooth. Strain if desired for a thinner texture.
  6. Season with black pepper or red chili flakes to taste. Serve hot.
